Massaged Kale Salad with Lemon, Red Cabbage & Blue Cheese
Sometimes all you need for a truly delicious salad is a handful of simple ingredients treated with care. Kale may seem tough at first, but once it’s massaged with lemon juice and olive oil, it softens into something silky, fresh, and full of flavour. This version layers in a little extra crunch and colour from shredded red cabbage, the nutty bite of pumpkin seeds, and a touch of creamy blue cheese. The result is a dish that’s both wholesome and indulgent in just the right measure.
Ingredients (serves 2–3 as a side)
- 1 large bunch kale, stems removed and leaves chopped
- 1 cup finely shredded red cabbage
- 2 tbsp extra virgin olive oil
- Juice of 1 lemon (plus zest, if you like extra brightness)
- 1 small garlic clove, minced or grated (optional)
- Sea salt and black pepper, to taste
- 3 tbsp toasted pumpkin seeds
- 40–50g (about ¼ cup) crumbled blue cheese
Method
- Prepare the greens. Wash, dry, and chop the kale into bite-sized pieces. Finely shred the red cabbage.
- Make the dressing. Whisk the olive oil, lemon juice, garlic (if using), salt, and black pepper in a small bowl.
- Massage the kale. Place the kale in a large bowl, pour over the dressing, and massage with your hands for 2–3 minutes until the leaves soften and darken.
- Add the extras. Fold in the shredded red cabbage, then top with pumpkin seeds and blue cheese.
- Serve. Enjoy immediately or let it sit for 10 minutes to allow the flavours to mingle.
Why It Works
The kale and lemon still take centre stage, creating a bright, tender base. The red cabbage adds freshness and crunch, pumpkin seeds bring toasty depth, and the blue cheese finishes things off with a creamy tang. It’s simple, balanced, and satisfying – proof that a salad can be both everyday-healthy and dinner-party worthy.
