Vibrant Beetroot & Celeriac Soup – A Bowl of Health and Comfort

There’s something magical about the way simple root vegetables can be transformed into a bowl of silky, nourishing soup. Beetroot and celeriac may not always get the spotlight they deserve, but together they create a dish that’s earthy, slightly sweet, and incredibly satisfying. Even better, this soup is packed with nutrients that support your body from the inside out.

Why Beetroot & Celeriac?

Beetroot is rich in antioxidants, iron, folate, and nitrates that can help support circulation and stamina. Its natural sweetness balances beautifully with more savoury flavours.

Celeriac, often overlooked, brings a subtle nutty and celery-like flavour. It’s low in calories but high in fibre, vitamin C, and potassium, making it a fantastic base for a healthy soup.

Together, they make a vibrant bowl that feels indulgent but is wonderfully good for you.

Ingredients (serves 4)

  • 3 medium beetroots, peeled and diced
  • 1 medium celeriac, peeled and diced
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil (or rapeseed oil)
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 litre low-sodium vegetable stock
  • ½ tsp ground cumin (optional, for warmth)
  • Juice of half a lemon (to brighten flavours)
  • Salt and black pepper, to taste
  • To serve (optional but recommended):
  • A swirl of natural yogurt or kefir (for creaminess and gut-friendly probiotics)
  • Fresh herbs like parsley or dill
  • A sprinkle of toasted pumpkin seeds for crunch

Method

  1. Prep your roots. Peel and dice the beetroot and celeriac into small chunks. The smaller the pieces, the quicker they’ll cook.
  2. Soften the aromatics. In a large saucepan, heat the olive oil over medium heat. Add the onion and cook gently until translucent, then stir in the garlic, thyme, and cumin.
  3. Build the base. Add the beetroot and celeriac to the pan, stirring so they’re coated in the fragrant oil. Cook for 5 minutes, allowing the flavours to mingle.
  4. Simmer to perfection. Pour in the vegetable stock and bring to a gentle boil. Reduce the heat, cover, and simmer for about 30 minutes, or until the vegetables are tender.
  5. Blend it smooth. Using a stick blender (or carefully in a jug blender), whizz the soup until velvety. Add the lemon juice, taste, and adjust seasoning with salt and black pepper.
  6. Serve & garnish. Ladle into bowls, then top with a swirl of yogurt, a sprinkle of herbs, and a handful of crunchy seeds.

Healthy & Delicious

This soup is naturally dairy-free and vegan if you skip the yogurt, but still luxuriously creamy thanks to the texture of the blended roots. It’s a perfect lunch or light dinner that keeps you satisfied without weighing you down. Plus, the deep ruby colour makes it as beautiful as it is nourishing.

So next time you’re at the market and spot celeriac looking a little gnarly in the corner – don’t walk past it. Bring it home, pair it with beets, and let this soup surprise you.
